3 eggs
2 c. sugar
3 tsp. vanilla
1 cup oil
2 c. shredded zucchini, unpeeled
3 c. flour
1/2 tsp. baking powder
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
1/2 c. nuts (optional)
1 c. chocolate chips (optional)

Beat eggs until light and fluffy. Add sugar, vanilla and oil. Blend well. Stir in zucchini. Add flour, baking powder, salt, soda and cinnamon. Blend. Fold in nuts and/or chocolate chips if desired. Grease with shortening 2 loaf pans. Add 1/4 c. sugar and turn pans to coat. Pour in batter. Bake at 350 for about an hour. Makes 2 loaves.
