8 oz. package elbow macaroni
cheese
butter
milk
salt
pepper

Directions:

Cook elbow macaroni according to box directions.
Drain and place in baking dish - approx 9x13 in.
Mix in a 16 oz. bag of shredded cheese, or use any desired cheese to taste.
Dot with lots of butter pats.
Add enough milk to barely cover.
Salt and Pepper to taste.
Bake at 350 degrees approx 1 hour or until firm.

This was served often in the farm kitchen to meet the demand of hungry kids who loved this casserole. It was very convenient to make as the ingredients were always on hand. Any cheese that needs to be used works, but colby is especially good. Velveeta makes a nice creamy dish and a combination of cheeses can give a tangy flavor.

Now up to modern times, some good substitutions are soy milk for cow,s milk. Different shapes of pasta can add interest. Margarine in place of butter does not alter the taste. To make it a totally non-dairy dish, soy cheese can be substituted. The texture will be different and you may want to use your imagination with flavoring with these substitutions. This dish is fun to experiment with and the rewards are good. It's a feel-good food.
