2 Tbsp butter
6 oz. diced ham
1 large onion, chopped
3 Tbsp flour
32 oz. chicken stock
1 large potato, chopped, small
1 c evaporated milk or half and half
4 c fresh or frozen corn
1 red bell pepper, diced
3 green onions, sliced
Salt on pepper to taste
1 Tbsp chopped basil or cilantro

Directions:
Directions:
Melt butter, add ham and onions, and cook 5 minutes. Stir in flour and cook 1 minute. Add stock and potatoes (about 2 cups), cook over medium heat for 15 minute. Add milk, corn, red pepper and green onions, cook for 10 min. more. Season to taste with salt and pepper--garnish with basil or cilantro.
