2 lbs fresh collard greens
4 slices low sodium bacon, chopped
2 cloves garlic, minced
1 medium onion, chopped
2 cups water
1 tsp sugar
1/2 tsp red pepper flakes, crushed
1 /4 tsp salt

Directions:
Directions:
Wash collard greens, removing all grit. Remove stems. Place greens in small bunches, roll up. Cut crosswise into wide strips. Cook bacon in large skilet over medium heat; remove with slotted spoon. Drain skillet, reserving 1 tbsp. of drippings in skillet. Cook and stir onions and garlic in reserved drippings in skillet until tender. Add greens, water, sugar, red pepper flakes, and salt. Simmer on low heat, 45 minutes to 1 hour or until greens are soft and tender. Stir in bacon and serve. Serves: 6-8 Prep: 1 hr.
