4 oz. salt pork with rind
3 quarts turnip greens
10 cups water
1 tsp. salt
1 1/2 cups white cornmeal
1/2 cup all purpose flour
1 tsp. baking powder
1 tsp. sugar
1/2 tsp. salt
3 tbsp. butter or margarine, melted
1 egg, beaten

Directions:
Dice salt pork, cutting to but not through rind. Wash and trim greens, making sure they are rinsed well. Peel and quarter turnips. In a large skillet bring water to boiling, add salt pork, turnips greens, and 1 tsp salt. Simmer covered for 2 hours. Remove 1 cup of liquid. Stir together the cornmeal, flour, baking powder, sugar, 1/2 tsp salt; stir in butter and reserved liquid; stir in egg. Spoon 1 rounded tablespoon of batter at a time onto simmering greens. Cover and simmer for 30 minutes. Serves: 6 Prep: 20 min. + 2.5 hrs cooking
