Cranberry-Orange Nut Bread Recipe

4 c. flour
1 T. baking powder
1 tsp. salt
1 tsp. baking soda
1 c. walnuts or pecans chopped (optional)
2 c. cranberries, washed, picked over and cut in half
1 1/2 c. sugar
2 eggs, beaten
1 1/2 c. orange juice
1/2 c. vegetable oil
2 tsp. grated orange rind

Sift together dry ingredients. Stir in cranberries, nuts and orange rind. Combine eggs, orange juice, and oil. Add to dry ingredients, stirring until just moistened. Divide batter into 3 lightly greased and floured 7 x 3 x 3 inch loaf pans. Bake in a preheated 375 oven for 45 to 50 minutes.
