1 1/2 cups sugar
3/4 cup butter
1 cup milk
4 egg whites, beaten
1 1/2 cups chopped figs
1 teaspoon cinnamon
1 Tblsp molasses
3 cups flour
1/2 tsp salt
4 tsp baking powder
1 tsp lemon flavoring or vanilla flavoring

Mix together the butter and sugar, then add milk. In another bowl, combine the flour, salt and baking powder. Add half of the flour mixture to the butter and sugar. Beat egg whites until stiff, then fold into batter. Add the remaining flour and flavoring and mix well. Remove about 1/3 of the batter to a separate bowl. To the remaining 2/3 of the batter, add the figs (that have been dredged in flour), molasses, and cinnamon. Pour into an oiled and floured tube pan. Swirl the remaining 1/3 of the light colored batter into the dark colored batter in the tube pan. Bake at 350º for 55 to 60 minutes.
