1- 2 to 3 lb. flank steak
2 T. soy sauce
1 T. Dijon mustard
1 clove garlic, pressed
3 T. red wine vinegar
1/2 c. canola oil
1/2 tsp. nutmeg



Stuffing:

1/2 lb. bulk sausage
1 1/2 c. grated zucchini
1 egg, slightly beaten
1/4 c. slivered almonds
1/2 onion chpd.
1/2 tsp. salt
1/2 c. bread crumbs
3 T. steak marinade

Directions:
Directions:
Have butcher tenderize flank steak. Pound slightly.
Mix soy, garlic, vinegar, mustard, oil, pepper and nutmeg. Place steak in ziplock bag with marinade.
Marinate for 1hr. turning often.

Lay steak flat on a cutting board and spread with zucchini stuffing to within 1" of each side. Roll , jellyroll fashion, tying with string to secure. Place in roasting pan. Bake at 450º for 35 min.
