Mom's Beef Sweetbreads Recipe

Ingredients: 2-3 pounds of beef sweetbreads 1 Tsp of vinegar 4 cups of boiling water 2 Tsp of butter 1 Medium size green bell pepper 1 small onion 1 small Can of mushrooms 1 small jar of pimento 1 small can of tomato juice 1 Tsp of flour

Directions:In a large sauce pan bring the water to a boil. Add the vinegar and place the washed and trimmed sweetbreads in the water and boil for 10 minutes. Drain the sweetbreads and plunge them into ice water to cool. Peel the outer tough membrane off of the sweet breads and place them in a bowl. Over medium heat place the butter in a large saucepan and add the chopped pepper and onion, saute until the onion is transparent and the pepper is soft. Add the pimento and mushrooms and continue to cook for 5 minutes. Add the flour and cook for about three minutes and add the tomato juice. If the sauce becomes to thick, thin with a little with water. Stir until the sauce is smooth and add the cleaned and cooked sweetbreads. Reduce the heat and cook for about 45 minutes. Serve with rice or buttered noodles. |
