8 to 12 new, red potatoes
1 tsp salt
1 pkg cornbread mix, following pkg directions
oil

Directions:
Directions:
Scrape potatoes lightly, rinse, and put in pot of hot water to boil. Boil until tender enough to stick a fork in. Remove from heat. Drain and rinse with cold water; set aside to finish draining. Heat skillet with oil in it, cut potatoes in quarters, salt and pepper. Dip in cornbread mix batter and put in pan to fry until a golden brown; drain on paper towels and serve while warm. Serve with any main meal you desire. Serves: 6 Prep: 20 min.
