4 large potatoes
1/4 cup cooking oil
2 tsp salt
1/8 tsp paprika
1/4 tsp pepper
1 small onion

Directions:
Peel potatoes and wash in cool water and slice to french fry shapes, rinse again. Heat skillet to very hot. Pour in oil, pour in potatoes, lower to simmer. Sprinkle salt, pepper, paprika, and diced onion, over potatoes, cover and bake until light brown. Turn potatoes and cook until soft and tender. Tip: Do not stir potatoes. It will make them look mushy. Good served with Louisiana hot sauce or catsup. Serves: 10 Prep: 15-20 min.
