Squeeze out and add:

celery

Add to meat when the meat is about half done.

We like to go heavy on the celery and onion. Mom generally placed the dressing in a baking pan and added drippings from the turkey roast, rather than stuffing the turkey.

This dressing is one of those family expections at the holiday season when roast turkey is served. It's especially good covered with gravy.

Stale bread works best, so we save bread for several days prior to the meal.
