1 lb linquine or fettuccine
1 lb fresh tomatoes
1 lb ricotta
3 lemons
olives
capers
mint
italian parsley
olive oil
salt and pepper

Directions:
Directions:
Cut tomatoes into bite size cubes
Roughly chop mint and parsley
Add to bowl wtih olives and capers
Add olive oil
Juice 2 lemons into bowl
Add salt and pepper to taste

When pasta is done, drain and return to pot
mix in ricotta until smooth
mix in tomato mixture

Transfer to serving bown
garnish with lemon wedges and fresh mint
servie
