Buckwheat Pancakes
1/4 cake yeast
2 1/2 c buckwheat flour
1/2 c white flour
2 tsp. salt
2 T sugar
2 c water
1 c milk
Mix the night before for breakfast next morning.
Buckwheat Pancakes
1 1/2 c flour - half and half
4 tsp. baking powder
salt
2+ T sugar
2 eggs
1 1/2 c milk
4 1/2 T melted shortening
(1/2 of this recipe enough for two)
Buckwheat Pancakes
1 c buckwheat flour
1/4 tsp. salt
1 T baking powder
1 tsp. sugar
1 egg
1 T cooking oil
2 c milk
Mix all dry ingredients well, then add egg, oil and 1 cup of the milk. Blend, this will be a very thick batter. Then add remaining milk and stir until blended. This will make a thin batter. Fry on hot, well greased griddle.

During the l970's Dad experimented for a few years raising a field of buckwheat after a dealer gave him the seed to try. It was a beautiful sight when the field was covered with white blooms. Mom kept an eye out for recipes using this special grain and the above pancake recipes were probably all tried in her kitchen. The first two recipes were favorites of Mom and Dad's and were prepared and enjoyed often.

One of the treasured finds I made while cleaning out drawers after Mom and Dad no longer needed the farmhouse, was a small medicine bottle filled with buckwheat seed which by now must be thirty plus years old. I plan to plant some of these seeds with hopes of resurrecting this particular line of buchwheat.
