1/4 cup vegetable oil or softened margarine
1/4 mashed ripe banana
2 eggs
3 tablespoons lemon juice
2/3 cup plain non-fat yogurt
1/4 cup skim milk
1 teaspoon vanilla extract
1/3 cup flour
1 teaspoon baking soda
2 teaspoons baking powder

Glaze:
6 oz. can unsweetened frozen pineapple juice concentrate
1 teaspoon cornstarch
1/2 teaspoon cinnamon

Cake:
Beat oil, banana, and eggs until creamy. Add lemon juice, yogurt, milk, and vanilla
extract. Beat well.Add remaining ingredients and beat until smooth. Spoon batter into a 9" round or square baking pan sprayed with non-stick spray. Smooth batter evenly in pan. Bake at 350° F for 25 minutes or until nicely browned. Cool on wire rack.

Glaze:
Combine ingredients in a small saucepan and whip with a whisk over medium heat until mixture thickens slightly. Remove from heat. To serve, spoon glaze over warm cake.
