1 peg lentils
1 small 15oz can tomatoes, chopped
1 med onion, chopped
3 carrots, peeled & sliced
2 Slices bacon
2 stalks celery
1tsp thyme
1 generous piece sausage, sliced

Directions:
Directions:
Wash lentils, drain and let dry. Fry bacon and remove from pan, then crumble. In bacon fat cook onion, celery and carrots. Sprinkle with thyme, salt, pepper. Add sausage, crumbled bacon, tomatoes and lentils. Add 5-6 quarts water and simmer until lentils are tender. Freezes well.
