2/3 c butter
2/3 c flour
7 c milk
4 large baking potatoes, baked, cooled, peeled and cubed (4 c)
4 green onions, sliced
12 bacon strips, cooked and crumbled
1 1/4 c grated cheddar cheese
1 c sour cream
3/4 tsp salt
1/2 tsp pepper

In a large Dutch oven, melt the butter and stir in flour until smooth. Gradually add the milk, stirring constantly until thickened. Add the potatoes and onions and bring to a boil, stirring. Reduce heat and simmer for 10 minutes. Add the rest of the ingredients and stir until cheese melts. Garnish with additional green onion, bacon and cheddar cheese, if desired.

Great recipe for leftover baked potatoes. Brooke likes potato soup so we ate many versions. This recipe is from Linda Glick, who I worked with at Dr Atkinson's. We had it at a soup luncheon at work.
