2 c Blue Diamond blanched almond paste
1 c granulated sugar
6 large egg whites
powdered sugar
seedless raspberry jam, stirred until smooth

Directions:
Directions:
Beat almond paste and sugar until mixture resembles coarse cornmeal. Beat in egg whites a little at a time until thoroughly combined. Place heaping teaspoons onto cookie sheet lined with waxed paper or parchment paper. Coat finger with powdered sugar and make indentation in middle of each cookie, coating finger each time. Bake at 350º for 15-20 minutes or until lightly browned. Remove from oven and fill each indentation with about 1/4 teaspoon raspberry jam. Cool. Yield 30
