2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
2 beaten eggs
1 1/2 c. mashed bananas
1 c. sugar
1/2 c. cooking oil or melted butter
1/4 c. chopped nuts
1 recipe for Streusel-Nut Topping

1. Grease the bottom and 1/2 inch up the sides of one 9 x 5 x 3 inch or two 7 1/2 x 3 1/2 x 2 inch loaf pans; set aside. Combine flour, baking powder, baking soda, cinnamon, nutmeg and 1/4 tsp. salt.

2. In a medium bowl combine the eggs, bananas, sugar and oil/butter. Add egg mixture. Stir just until moistened (batter should be lumpy). Fold in nuts. Spoon batter into pan(s). If desired, sprinkle Streusel-Nut Topping over the batter.

3. Bake in a 350 degree oven for 55 to 60 minutes for a 9 x 5 x 3 inch pan, or 40 to 45 minutes for a 7 1/2 x 3 1/2 x 2 inch pan(s), or until a toothpick inserted near the center comes out clean. If necessary, cover loosely to prevent overbrowning. Cool in pan on a wire rack for 10 minutes. Remove from pan(s).

Streusel-Nut Topping

In a small bowl combine 1/4 c. packed brown sugar and 3 T. all-purpose flour. Put in 2 T. of butter and mix with hands until mixture resembles coarse crumbs. If desired, stir in 1/3 c. chopped walnuts.
