1 can cream corn
1 can whole kernel corn, don't drain
2 eggs, beaten
1 box Jiffy corn muffin mix
1 1/2 c. sharp cheddar cheese, shredded
1/2 stick butter
1/2 onion, diced
1/2 c. green peppers, diced (optional)
Directions:
Directions:
Saute onions and green peppers in butter. Mix all ingredients. Bake in a glass casserole dish (8x8) at 350º for 1 hour. Absolutely wonderful!
