Ingredients:  
4 Salmon, Tuna or other, about 1-1/2lbs and about 1" thick.
3 tbsp. olive oil
3 tbsp. butter
2 tbsp. dijon mustard
1 tbsp. mustard seeds
1 tsp. ground cumin
1/4 tsp. red pepper flakes
1 tbsp. lemon juice
1 tbsp. orange rind, grated
3 tbsp. fresh parsley, chopped

Preheat grill or oven broiler to med to high heat.
Mix all ingredients and place fish in marinade and coat on both sides. Let set in cool place, 15 min. or longer. Remove fish from marinade and place on hot grill. Cook 3 minutes on one side.
Turn and cook 2 more minutes for rare;
3 more minutes for med-rare;
4-5 more minutes for well done.
Baste in beginning while cooking.
Serve with some lemon wedges. Serves 4.
