1/4 stick margarine
1 1/2 c. rice
1 small onion
1/2 tsp. garlic powder
1/2 tsp. ground cumin
1 tsp. chili powder
1 can Rotel + 1 can tomato sauce + enough water to make 3 cups of liquid

Directions:
Directions:
Brown rice in butter, add onion and garlic. Cook and stir until onion is soft. Add cumin and chili powder. Add the 3 cups of tomato, Rotel, and water mixture and bring to a boil. Reduce heat, cover and simmer until liquid is absorbed and rice is tender.

Variation: Brown 1 to 1 1/2 lbs of ground chuck, season with salt and pepper. Increase liquid amount to 3 1/2 c. Add meat to rice with tomato mixture.
