1¾ cups flour
1/2 cup butter, softened
2/3 cup sugar
3 eggs
1 tsp. baking powder
1 tsp. vanilla
1 tsp. anise oil

For Chocolate Pizzelle:
same as above, but omit anise oil, adding:
1/4 cup cocoa powder
1/4 cup sugar
1/2 cups finely chopped nuts

Directions:

Preheat Pizzelle iron and lightly coat with nonstick cooking spray. In a large bowl, mix all ingredients. Drop slightly rounded tablespoons of batter on pizzelle iron and close. Cook approximately 30 seconds to one minute, or to pizzelle iron’s directions. Remove from iron and cool completely on cookie racks. Store cookies for up to 2 weeks at room temperature. Layer cookies between parchment paper in airtight tins or sturdy container. They are fragile and will break easily. Makes about 3 dozen.
