21/2 cups flour
2 tsp baking soda
2tsp cinnamon
1tsp pumpkin pie spice or allspice
1tsp baking powder
1tsp salt
3/4 cup light brown sugar
3 eggs or energ vegan egg replacer
1tsp vanilla
1cup vegetable oil
2 cups finely grated carrots
1 can(14oz) pineapple crushed and drained
1 cup shredded coconut
nuts and raisins
Cream cheese frosting
1 package cream cheese or vegan soy margerine
( Earth Balance)
1 tsp vanilla
2 cups confectioners sugar

preheat 350
mix dry ingredients, and beat eggs and sugar, mix wet and dry ingredients then add vanilla and oil and add carrots, pineapple and coconut. Use a 9x9 or 9x13 greased pan. Bake 40-45 min until toothpick clean, cool before frosting.
