3 eggs
1 c. sugar
1 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
2 c. powdered sugar
1 (3 oz.) cream cheese, softened
4 T. margarine or butter
1/2 tsp. vanilla

Beat eggs at high speed for 5 minutes. Add next 3 ingredients. Fold in next 6 ingredients. Spread pumpkin mixture on greased cookie sheet and bake at 375 for 15 minutes or less. Dump upside down on a dishtowel with powdered sugar on it. Roll up long way in towel and refrigerate for 2 hours. Mix powdered sugar, cream cheese, margarine/butter and vanilla. Unroll and frost; roll back up. Slice into slices.
