1 (9 inch) deep dish pie crust, baked
3 pints strawberries, washed, hulled and cut in half
1½ cups water
1/4 cup cornstarch
1 cup sugar
1 (3 oz) pkge. strawberry jello

Directions:
Directions:
In a saucepan, blend water and cornstarch until smooth. Add sugar and cook over medium heat until mixture becomes clear, stirring constantly. Remove from heat and stir in jello until completely dissolved. Refrigerate for 15 minutes or until slightly cooled. Place strawberries in baked shell and pour jello mixture over top of berries to cover them all. Refrigerate at least 3 hours until set. Serve with whipped cream, if desired. Serves 8.

Mom found this recipe when we moved to Wilmington, NC. (1982) We couldn't get enough of it. It is so refreshing and light. Great served with whipped cream.
