1 T Olive Oil
1/2 c chopped onion
2 minced garlic
1/2 tsp dried thyme
1 8oz package of sliced mushrooms
1 -1 1/2 lbs of thin sliced chicken breasts, cut into bite sized pieces
1/2 c dry white wine
salt and pepper
1 c uncooked instant rice
1 c fat free chicken broth
1/2 c Parmesan cheese
1/4 c chopped parsely

Directions:
Directions:
Heat olive oil in a large skillet over medium high heat. Add onion,garlic,thyme and mushrooms,saute' 5 minutes or until onion is tender.Add chicken, saute' 4 minutes or until chicken is lightly browned. Add wine,salt and pepper and; cook for 3 minutes or until liquid is almost evaporated.
Stir in rice and chicken broth. Bring to a boil; cover, reduce heat and simmer 5 minutes or until liquid is absorbed. Stir in Parmsan cheese and chopped fresh parsley.
