Ingredients: CAKE: 1 pkg Duncan Hines Yellow cake mix 4 eggs 3/4 C. vegetable oil 1 (11 oz.) can mandarin oranges. ------- ICING: 1 Large can crushed pineapple, slightly drained (reserve juice) 1 (9 oz.) container of Cool Whip (Lite or regular) 1 (3 oz.) pkg. vanilla instyant pudding

Directions:Preparation: Combine cake mix, eggs and oil and beat about 2 minutes. Add orange slices and juice and beat about 1 minute. Pour into greased and floured 9x13 pan and bake at 350º for about 25 minutes or until springy. DO NOT OVERCOOK. Let cool and then add icing.
ICING: (I poke holes into the cooled cake and pour the reserved pinapple juice over the cake before icing) Mix drained pineapple pieces with vanilla pudding; blend well. Fold in Cool Whip. Keep refridgerated |

Notes: This cake is a wonderful light cake, it is called a pig picking cake because it has all the flavors to compliment a pig picking. Very tropical in flavor. It is simple to make and great to take to a large gathering. It does require refridgeration once the topping has been put on, but the topping can wait until the last minute if required. Bring copies of the recipe.... you will get requests for it.
