4 T. unsalted butter
2 medium white onions, chopped
3 T. flour
1/2 t. salt
1/2 t. celery salt
1/4 t. pepper
2 cups half and half
1 c. grated sharp cheese (cheddar cheese)
3 medium potatoes (about 2 lbs.)
2 cups ham, diced

1. Melt butter in a saucepan, cook onions until soft. Do not brown.
2. Stir in the flour, salt, celery salt and pepper.
3. Gradually add the half and half stirring until smooth and begins to thicken.
4. Add the cheese.
5. Butter a casserole and fill with alternating layers of potatoes ham and sauce.
6. Bake covered in 375 preheated oven for 45 minutes.
7. Remove cover and bake 20 minutes longer and the top is golden brown.
