Quick Goulash Soup Recipe

1 large onion
1 red or green pepper
2 T. oil
10 oz. ground pork or veal
1 T. flour
pinch of salt, paprika & pepper
1 c. tomato juice
2 c. beef broth
1 garlic clove
1 can green beans
1/2 c. heavy cream

1. Peel and finely diced onion.
2. Cut pepper into strips.
3. Heat oil in saucepan, large enough to hold all ingredients.
4. Sauté diced onion until translucent.
5. Add ground meat and sauté rapidly, stirring constantly.
6. Sprinkle flour, salt, paprika and pepper over meat and mix well.
7. Add strips of pepper.
8. Gradually pour in tomato juice, then beef broth.
9. Let cook 5 minutes stirring occasionally.
10. Peel garlic and chop coarsely.
11. Sprinkle with salt and :rush with fork.
12. Drain beans in colander.
13. Add the garlic and beans to soup and bring to boil.
14. Stir in cream and serve.
