3 c cooked chicken, chunked
2 apples, diced
1 c sliced celery
1 c seedless grapes
1/2 c salted cashews, chopped
1 tbsp ever-fresh
2 tbsp water
1/2 c mayonnaise
1/2 c plain yogurt
2 tbsp lemon juice
1/2 tsp powdered ginger

Dissolve Ever-Fresh in water. (See notes) Toss the apple chunks in mixture to coat. Drain. Combine chicken, celery, grapes and nuts with apples. Stir well. Mix together mayonnaise, yogurt, lemon juice and ginger. Combine dressing with chicken fruit mixture. Chill.

This can be prepared ahead of time. To avoid the apples turning color they can be dipped in an ascorbic acid/citric acid mixture. Ever-Fresh was the brand when Mom copied this recipe.

By using light mayonnaise, and low-fat yogurt the salad has 210 calories per serving.
