2 packages (10 ounces each) refrigerated pizza crust
2 tbsp. olive oil
1 tsp Italian seasoning mix
2 garlic cloves, pressed
1 c. shredded mozarella cheese, divided
1 can pitted ripe olives, drained and sliced
1/2 chopped onion, chopped
2 plum tomatoes, thinly sliced
1/4 c. parmesan cheese (fresh grated)
Additional Italian seasoning mix

Directions:

Preheat oven to 400º. Unroll both packages of pizza dough and arrange side by side on a baking stone. Roll dough with rolling pin until spread out and seams closed. In a bowl, combine oil, seasoning mix and garlic. Mix well. Spread oil over crust and top with 3/4 of mozzarella cheese. Sprinkle olives and onions over dough. Top with tomatoes and remaining mozzarella cheese.Sprinkle parmesan cheese over dough and sprinkle with additional Italian seasoning mix.
Bake 25 minutes or until cheese is melted and crust is golden brown. Remove from oven and let stand 10 miinutes. Cut into squares.
