6 large ripe tomatoes
1/4 c. olive oil

Preheat the oven to 325 degrees.
Slice the tomatoes in half crosswise. Place the tomatoes on a baking sheet, cut side up. Pour the oil over the tomatoes. Sprinkle with salt as desired.
Bake for about 2 hours, until tomatoes are wrinkled on the outside but still somewhat moist in the center. Serve warm or cool.

I tend to make more than the 6 servings and store them in olive oil in the refrigerator so that I have them on hand when I need them. They have an incredible taste and make a terrific side dish for chicken. Use them as a quick addition to homemade pizza or omelets. Serve them warm with grilled bread and fresh basil leaves.
