1 9 or 10 inch pie crust
3 medium potatoes, peeled
4-6 slices bacon
1 cup onion, sliced
2 8 oz. cans minced clams
1/2 cup milk (approx.)
1/4 cup margerine
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper

Cook potatoes, peel, drain, and slice 1/4 inch thick. Cook bacon until crispy; drain and crumble. Add onions to bacon fat (I know!!!) and cook until tender. Drain clams into 2 cup measure and add enough milk to broth to make 1 3/4 cups. Mix clams, bacon, and onions together and set aside. Melt margerine in sauce pan, add flour and seasonings and cook until bubbly, about 1 minute. Add the reserved liquid and cook, stirring, until thickened. Combine sauce mixture and clam mixture. Put sliced potatoes in the bottom of greased 9 or 10 inch pie plate ( no crust),
Pour clam mixture over potatoes and top with the unbaked pie crust. Put a few slits in crust for steam to escape. Bake in 450 degree oven for 25 minutes until golden. This is easier to serve if left to sit for 10-15 minutes. It will stay hot.
