10 medium to large baking potatoes
1 stick butter
1/2 cup sour cream
1 cup milk (more if needed)
3 cup shredded cheddar cheese
salt and pepper
paprika

Directions:
Directions:
Bake potatoes in a 400º oven about 1 hour or until done. Cut potatoes in half. With a spoon remove potato down to shell, being careful not to break the shell. Place potatoes in a large mixing bowl, add butter, sour cream, milk, 1cup of the cheddar cheese, S & P.

Make mashed potatoes with mixer. Place potato shells on baking sheet. With spoon, scoop and fill potato shells with mashed potatoes. Sprinke with remaining cheese and then sprinkle with paprika. Bake at 350º oven for 30 minutes.

This is Aunt Pat’s recipe and Mom makes these a lot for big gatherings. They can be stuffed then frozen on baking sheet. Once frozen we put them in ziploc bags. When cutting the pototoes once baked, if you just cut the top off (and save tops for later use as potato skins) it makes for a whole potato, rather than 2 halves.
