½ - 1 lb bag of penne pasta
2 Tbsp butter
½ c chopped onion
1 tsp minced garlic
2 cans stewed tomatoes, or diced if you like
½ cube or more of grated cheddar cheese (medium cheddar is best)
A handful of grated parmesean
Salt, pepper and seasonings to taste

Boil pasta and undercook so it is still chewy. Drain and set aside. In a sucepan sautee onions, garlic, and season salt/Mrs. Dash in the butter. Grate your cheese and you can use as much or as little cheese as you like. In a casserole pan I put noodles and toss with onion mixture. Add tomatoes and a little liquid (about ½ can -- I just scoop them out with a spoon and whatever liquid gets in is good enough). Then toss in the cheese and stir it all together. Cover and cook for 30 minutes at 350º. Cook 10 more minutes, uncovered.

This is easy and a great meal. Good leftovers. It can make a little or a lot depending on the amount of pasta you use.
