1 pound sharp cheddar cheese
1 pound butter
4 cups flour (sifted once)
1/4 teaspoon salt
1/8 to 1/4 teaspoon cayenne
Pecan halves

Directions:
Directions:
Grate cheese and mix with butter at room temperature. Add flour, salt and cayenne. Mix well, using hands. Make small balls by rolling in palms of hands.
Place on ungreased baking sheet. Press half a pecan in center of each ball, mashing in well. Bake at 325 degrees for 20 to 25 minutes. They do not really brown, so be careful not to over bake, as they become bitter.
