Flour
2 Tbs. vegetable oil
6 firm ripe tomatoes
2/3 c. firmly packed brown sugar
5 Tbs. butter
1 1/2 c. whipping cream

Directions:
Directions:
Cut tomatoes into thick slices and coat both sides well with flour. Melt the butter and oil in a heavy skillet and add tomato slices. While they are cooking, sprinkle with 1/2 of the brown sugar. Allow to caramelize well, then turn over, coat with the rest of the sugar and allow to caramelize. Add the cream to the pan and allow the slices to simmer for 3 - 4 minutes. Serve over toast if desired.
