6 tbsp. unsalted butter
2 1/2 cups dry bread crumbs
1/4 cup brown sugar
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tbsp. butter, softened
1 tbsp. grated lemon zest
2 1/2 cups applesauce
2 tbsp. butter

1. Preheat oven to 375º. Melt unsalted butter in large skillet over medium heat. Add bread crumbs, sugar, cinnamon, nutmeg; stir until crumbs become lightly browned, about 5 minutes. Set aside, reserving 1/2 cup of crumbs for topping.
2. Coat inside of 1-1/2-quart souffle dish or other baking dish with soft butter and coat bottom with a 1/2-inch layer browned crumbs.
3. Mix lemon zest into applesauce, then pour a 1/2 inch layer over the crumbs in the dish. Repeat sequence until all the applesauce and crumbs are used. Top with reserved crumbs and the remaining 2 Tbsp. butter, cut into bits.
4. In the middle of a preheated oven, bake cake about 30 mins. If topping browns too rapidly, cover dish loosely with sheet of aluminum foil. Remove from oven and cool to room temperature.
