1-1 1/2 1lb boneless skinless chicken breast cubed
2 tsp canola oil
1 can (32 oz) V-8 juice (spicy*)
1 jar (16oz) salsa (medium-hot*)
1 can (15 oz) black beans, rinsed & drained
1 can butter beans*
1 package (10 oz) frozen corn, thawed
6 T reduced fat cheddar cheese-shredded
6 T reduced fat sour cream

Directions:
Directions:
Sauté chicken (or use left over chicken breast). Put in pot or slow cooker. Add V-8, salsa, beans, corn, and mix. Heat through or 3 to 4 hours if chicken is fresh. Serve with cheese, and sour cream.
