3 eggs
2 c. sugar
1 c. cooking oil
2 c. grated zucchini
1 tsp. vanilla
1 tsp. salt
1 tsp. baking powder
2 tsp. cinnamon
3 c. flour
1 1/2 tsp. baking soda
1/2 c. raisins (optional)
1 c. nuts (optional)

Mix eggs, sugar, oil, vanilla and zucchini, beat well. Sift flour, salt, soda, baking powder and cinnamon. Add to first mixture and bake in 2 greased loaf pans at 325 for one hour.
