2 Corn Tortillas
2 tsp veg. oil
1/3 cup chopped onion
1 California Chile (Roasted and Peeled)
4 Cups chicken broth
1 Cup cooked, shredded chicken
1 Tomato chopped
1 T. fresh lime juice (I use more)
Lime slices for garnish
Salt and Pepper to taste

Cut tortillas into "dorito" size strips and fry in a skillet in
1/2 " of vegetable oil at 365º F. Get them nice and crisp
so that they stand up in the soup and don't sog out.
Drain and set aside.

Heat 2 tsp oil in saucepan, add onion and chile and saute
until onion is tender. Add chicken, broth and salt and pepper
to taste. Simmer to 20 minutes, add tomato and simmer
for 5 more minutes. Add lime juice.

Serve by placing chips in bowl, ladling soup on top, and add
lime slice.Add a glass of beer and imagine the aqua blue
waters of the Caribbean.
