1 large can College Inn Chicken Broth
1 small onion, chopped
1/3 cup cornstarch
1/2 tsp. salt
1/4 tsp. white pepper
1 cup heavy cream/or milk
1/4 cup butter
Minced parsley
Cheddar Cheese
1/2 head cauliflower, broken into flowerets

Directions:
Directions:
Heat stock, cauliflower, and onion to boiling. Cover and simmer for 45 minutes.
Puree in blender, a cup or two at a time. Return pureed mixture to pan. Blend in salt, pepper, cornstarch and heavy cream, using wire whisk.

Add butter. Cook, stirring constantly, until thick and smooth. Do not boil. Garnish with parsley.

If desired add about 1 cup shredded cheddar cheese per 32 oz. of soup for extra flavor.
