1/4 cup corn oil
1 whole chicken breast, skinned
2 cloves garlic
1 cup diagonally sliced celery
1/4# mushrooms, sliced
16 oz can bean sprouts, drained
1 8 oz can sliced bamboo shoots, drained
1 1/2 cup chicken broth
1 tbsp corn starch
2 tbsp soy sauce
1/4 tsp ginger
1/16 tsp red pepper

Directions:
Directions:
In a large skillet, heat corn oil over medium heat. Add chicken and garlic. Stir fry for 2 mins. Add celery and mushrooms, fry 1 min. Add sprouts and bamboo shoots. Stir fry until heated thru. Stir chicken broth into corn starch until smooth. Add soy sauce, ginger and red pepper. Add liquid to fry pan stirring constantlhy. Bring to boil over medium heat. Boil for 1 min. Serve over rice.
