1 1/2 cups lukewarm water
1 pkg active dry yeast
4 tbsp sugar
2 1/2 tsp salt
3 1/2 cups flour
1 egg white
1 1/2 tsp water

Directions:
Pour 1/4 cup lukewarm water into a bowl with yeast. Sitr and let sit 5 mins. Add remaining water. Stir in 3 tbsp sugar and the salt. Add 2 cups flour and stir 100 strokes. Add enough remaining flour to make a firm dough. Turn our and knead for 10 mins.Place in an oiled glass bowl. Turn to coat. Cover bowl and let rise in a warm place for 1 hour. Punch down and knead again for 1 min. Divide into 8 pieces. Shape into balls. Let rest for 2-3 mins. Flatten slightly. Fill a large boiler with water and remaining 1 tbsp sugar and bring to a boil. Shape bagels, making hole in center and stretching slightly to shape of doughnut. Let rest for 10 mins. Drop 2 at a time into boiling water. Boil for 30-45 seconds and turn over for additional 30-45 seconds. Remove from water and drain. Preheat oven to 400º. Brush top of each bagel with mixture of egg white and 1 1/2 tsp water. Place bagels on baking sheet and bake for 22 to 25 mins. Cool. Store and prepare as you would normally.
