2 c sugar
1 and 1/4 c Wesson oil
4 eggs
1 t soda
1 t salt
2 c grated unpeeled carrots
1/2 c nuts chopped
2 c flour
2 t cinnamon
ICING
1 8oz cream cheese
1 stick margarine
1 box powder sugar
1 t vanilla flavoring

Directions:
Directions:
Blend sugar, oil, eggs together till creamy. Sift flour salt, soda, cinnamon together; add 1 tsp vanilla. Mix blended sugar with flour mix. Pour into tube pan; Bake at 300º for 30 minutes then reduce to 200º for 30-40 minutes, or until toothpick comes out clean when inserted in center.
ICING: Mix together till creamy, spread on cake. Decorate with pecans.
