Ingredients: 1 whole chicken (about 3 1/2 lbs.)
3 medium yams, about 10 oz. each, washed, unpeeled and
cut into 8 wedges
1-2 jumbo onions, peeled, cut into 8 wedges
2-3 Golden Delicious apples, washed, unpeeled, cored and
cut into 8 wedges
2-4 tapblespons orange marmalade
1/2 tstp. salt
1/4 tsp. pepper

Directions:Preheat oven to 450º. Remove giblets and neck from chicken.
With breast side up, lift wings up toward neck, then fold wing
tips under back of chicken so wing stay in place. Place
chicken breast-side up in roasting pan. Place yams and
onion wedges around chicken. Rub chicken with salt and
pepper. Roast chiciken and vegetables 40 minutes, basting
every 15-20 minutes. Remove pan from oven, tilt chicken to
drain juices from cavity onto vegetables. Add apple wedges
to pan. Roast 15 minutes longer. Brush chicken with
marmelade; roast 5 minutes longer or until vegetables and
apples are tender and chicken juices run clear when thickest
part of thight is pierced with tip of knife and temperature on
meat thermometer inserted into thickest part of thigh next to
body reaches 175º to 180º.º |
