2 lbs. ground beef
1 egg
1/3 c. uncooked brown rice
1 medium yellow onion, diced
1/2 c. water
1/2 clove garlic, minced
salt and pepper to taste
3 large green peppers, cored and cleaned
1 large can tomatoe juice or V8 juice, more as needed
2 T. flour

Directions:

Combine ground beef, egg, rice, onion, water, garlic, salt and
pepper. Mix ingredients thoroughly. Core and clean green
peppers to prepare them for meat stuffing. Stuff peppers and
form meatballs from any remaining meat mixture. Place
stuffed peppers and meatballs in large soup pot. Cover
stuffed peppers and meatballs with tomatoe juice. Cook
covered until tender, 1 to 1 1/2 hours, simmering gently.
Meatballs and stuffed peppers should be covered with
tomatoe juice as they cook, so add more tomatoe juice during
cooking if needed. Stir occassionally to avoid burning. Add
flour mixed with 1 T water about five minutes before serving to
thicken gravy. Serve with rice.
