1/2 pound jicama, peeled and sliced into 1/4 inch thick julienne
sticks
2 Granny Smith apples, cored and sliced into 1/4 inch thick
julienne sticks
1 medium red pepper, seeds and stem removed, sliced into
1/4 inch thick julienne sticks
4 T Honey Chipotle Vinaigrette
Salt, pepper and chopped cilantro to taste

Honey Chipotle Vinaigrette
1/4 c. water
1/4 c. red wine vinegar
1/4 c. Dijon mustard
1/4 t. basil
1/4 t. oregano
1/4 t. dill
1/4 t. thyme
1/4t t. sugar
1 clove garlic, minced
1/4 T. black pepper
1/4 T. salt
2 c. salad oil
1/4 c. honey
1 chipotle chile in adobo*
*Chipotle peppers in adobo sauce are available, canned, in
markets with Southwestern or Mexican ingredients.

Jicama Slaw
Combine jicama, apples, red pepper, salt, pepper and cilantro
in a large container. Toss with vinaigrette, cover container
and chill.

Honey Chipotle Vinaigrette
Mix water, vinegar, mustard, basil, oregano, dill, thyme, sugar,
garlic, pepper and salt in mixing bowl. Slowly whisk in oil until
emulsified. In a blender, puree honey and chipotle chile
together; whisk in with vinaigrett. Makes approximately 2 1/2
cups. Mix 4 T. with Jicama Slaw and chill. Garnish with
cilantro sprigs.
