1 (18.25oz) package yellow cake mis
2 tbsp cocoa
5 large eggs
1/2 c vegetable oil
1 cup buttermilk
2 (1oz) bottles of red liquid food coloring
Cream Cheese Frosting (recipe follows)
1 (8oz) package cream cheese, softened
1/4 c butter or margarine, softened
2and 1/2 c sifted powdered sugar
1 t vanilla extract

Beat cake mix, cocoa, eggs, oil, buttermilk and food coloring at low speed with an electric mixer for 2 minutes. Spoon batter evenly into 24 paper or foil-lined muffin cups, filling each two-thirds full; bake according to package directions. Remove from pans immediately and cool on wire racks.
Once cool; frost with cream cheese frosting.

Frosting:
Beat cream cheese and butter at medium speed with electric mixer until creamy. Gradually add sugar, beating at low speed until smooth. Stir in vanilla, beating until mixture is blended.
